Shrimp salad

Ta da! The inaugural post for this blog and I’m posting about salad. How much fun is that? Actually, this was really yummy and the colorful photo generated tons of “likes” on Facebook. Yup, I had to post it there too.

The shrimps you see here are the typical ones you get (frozen) at the store in Sweden. They are usually fished in the North Atlantic and quite a bit smaller than the ones you typically see in the States. They are also much tastier, in my opinion, and peeling them by hand is a snap.

The eggs (two of them) were cooked to perfection, with the yolk still on the creamy side. Aside from that, it just mixed salad from the store, tossed with a small amount of homemade honey dijon dressing, topped with tomato and cucumber. It doesn’t have to be any harder than that, really! The only problem is keeping the shrimp away from the cats. They got their fair share though.
